ROASTED SWEET POTATO SLICES 
4 lg. sweet potatoes
4 tbsp. olive or peanut oil
sea salt and freshly ground black pepper

Peel potatoes and slice 1/4 inch thick. Grease 2 baking sheets with 2 tablespoons oil. Arrange potatoes in a single layer and brush with remaining oil.

Roast at 350°F until centers are tender and edges are lightly tinged with brown, 45 to 50 minutes. Turn every 15 minutes. When turning, if potatoes are dry, spray with olive oil spray (remove pan from oven first).

Variation: Sprinkle potatoes with cinnamon sugar during the last 5 minutes of cooking for sweet cinnamon potatoes. To make cinnamon sugar, combine 1/2 tsp. cinnamon with 1/4 cup white granulated or Turbinado sugar.
