RHUBARB PIE 
1 pie shell
2 c. rhubarb (1/2 inch pieces)
1 c. sugar
2 tbsp. flour
1 egg
1 tsp. vanilla

TOPPING:

1/3 c. butter
1/3 c. brown sugar
3/4 c. flour

Mix rhubarb, sugar, flour, egg and vanilla together. Place into pie shell. Blend together butter, brown sugar and flour for topping. Sprinkle over top of filling. Bake at 425 degrees for 15 minutes, then 350 degrees for 30 minutes.
