CORNMEAL PIE 
1 c. sugar
1/2 c. brown sugar
1/2 c. butter, melted
3 eggs, separated
1/2 c. cornmeal
1 1/2 tsp. vanilla
1/2 c. light cream
1 c. pecans or coconut

Blend sugars and butter; add egg yolks, vanilla, cream and cornmeal. Lightly beat egg whites. Fold in egg whites and pecans or coconut. Pour into 9-inch pie crust and bake at 350 degrees for 35 minutes or until knife comes out clean.
