CORNMEAL MUSH 
2 3/4 c. water
1 c. cornmeal
1 c. water
1 tsp. salt

In a medium saucepan bring the 2 3/4 cups water to boiling. In a bowl combine cornmeal, the 1 cup water, and salt; slowly add to the boiling water, stirring constantly. Cook and stir until boiling. Reduce heat; cover and cook over low heat 10 to 15 minutes, stirring occasionally. If desired, serve with milk, butter, sugar or honey. Serves 4.

FRIED MUSH: Prepare Cornmeal Mush as above, except pour hot mush into an 8"x4"x2" loaf pan. Cool; chill several hours or overnight. Turn out of pan and cut into 1/2" thick slices. Fry slowly in butter or corn oil for 10 to 12 minutes on each side or until brown and crisp. If desired, serve with butter and syrup or honey. Serves 6.
