SWEET AND SOUR RED CABBAGE 
2 heads red cabbage, shredded
1 lg. apple, cored and sliced (leave peel on)
1/2 c. red wine vinegar
3/4 c. sugar
1 to 2 tsp. salt
4 to 6 bay leaves
Drippings from 4 strips of bacon
Water

In a large saucepot, layer shredded cabbage with other ingredients. Cover and simmer on low heat, stirring occasionally for at least 3 hours. Add water if needed.
