BANANA CHOCOLATE CHIP BREAD | |
1/2 c. butter 1/2 c. brown sugar 1/4 c. granulated sugar 2 eggs 1/2 tsp. vanilla 3 med. ripe bananas, mashed 2 c. flour 1 tsp. baking soda 1/2 tsp. salt 2/3 c. chocolate chips 1/2 c. nuts, chopped Cream butter and brown and white sugars until fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and mashed bananas. In a separate bowl, combine flour, baking soda, and salt. Add to banana mixture and blend thoroughly. Stir in chocolate chips and nuts. Pour into a greased 9 x 5 x 3 inch loaf pan. Bake in a preheated oven at 350 degrees for 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Remove from pan and cool on wire rack. Yield 1 loaf. Experiment with different kinds of chips. Try peanut butter chips or butterscotch chips. |
