OLD FASHION GERMAN POTATO SALAD | |
Given to my Mother by a German neighbor and passed onto my sisters and me. This nice neighbor learned how to make this from her "Grossmere" and it is delicious!! Boil 5 pounds potatoes (in skins) and 4-6 eggs (until hard boiled). Brown 1 pound bacon until crisp, cool and break into small pieces. Save grease. Chop 2-3 onions until fine. Skin and slice semi-cooled potatoes and eggs. Add bacon pieces, onions and 2-3 tablespoons parsley (or more, for additional color). In pan bacon was fried, measure: 1/4 c. bacon grease 3/4 c. vinegar 1/4 c. water 1 pinch of dry mustard 1 tsp. sugar Bring to boil and pour over warm potatoes and eggs, previously mixed with bacon pieces, onions and parsley. (For additional flavor add more vinegar - my family likes it puckery). Let season through in refrigerator and heat before serving. Keeps for at least a week or more. Makes 5 pounds plus. |
