PAN PIEROGI 
9 lasagna noodles
4 to 5 med. potatoes, peeled, boiled & mashed
2 c. shredded cheddar cheese
1/2 c. chopped onion (more if preferred)
3/4 c. butter
Salt & pepper to taste

Cook noodles in boiling water for 15 minutes. Drain and rinse in cold water, drain again. Mix together hot, mashed potatoes and season with salt and pepper.

Assemble: 3 strips of noodles in greased pan (approximately 11 x 7 inches). Layer with 1/2 potatoes. Repeat with noodles and potatoes, ending with final 3 noodles. Saute onion in butter until transparent and pour over noodles. Bake at 350 degrees for 20 minutes.

Serves 6 to 8.
