JEAN'S BUTTERMILK CHESS PIE | |
1 lg. unbaked pie shell 3 tbsp. flour 1 1/2 c. + 1 tbsp. sugar 1 stick butter 3 eggs Pinch salt 1/2 c. buttermilk 1-2 lemons (3-6 tbsp. lemon juice) 1/2 tsp. vanilla Prick the bottom of an unbaked pie shell with fork and rub mixture of 1 tablespoon flour and 1 tablespoon sugar into holes. (This keeps you from having a soggy pie crust.) Bake 10 minutes. Blend 2 tablespoons flour and 1 1/2 cups sugar. Melt butter slowly. Beat eggs. Add sugar and flour to eggs; beat. Add butter and beat. Add salt. Add buttermilk and mix; add lemon juice and vanilla and blend well. Pour into pastry shell and bake at 300 degrees for 50-60 minutes. |
