CHILI PEPPER POTATO SALAD | |
1 yellow or red sweet pepper, coarsely chopped 1 c. loose-packed frozen peas 1/4 c. reduced calorie creamy bacon salad dressing 1 (4 oz.) can diced green chili peppers, drained 1/8 tsp. pepper 1/8 tsp. bottled minced garlic Lettuce leaves (optional) In a large mixing bowl, toss together potatoes, sweet pepper, and peas. In a blender container, combine salad dressing, chili pepper, salt, pepper, and garlic. Cover and blend until smooth. Toss with the potato mixture. If desired, cover and quick chill in the freezer for 10 to 15 minutes or until cold. Serve on lettuce leaves. Makes 6 servings. |
