BASIC CREAM FILLING 
1/2 c. sugar
3 tbsp. flour
1/4 tsp. salt
1 1/4 c. milk
2 egg yolks or 1 egg, slightly beaten
1 tbsp. butter
1 tsp. vanilla

In small saucepan combine sugar, flour and salt. Gradually add milk; mix well. Cook over medium heat until mixture boils, stirring constantly; boil 1 minute. Blend small amount (1/4 cup) hot mixture into egg. Return egg mixture to saucepan; mix well. Cook until mixture starts to bubble, stirring constantly. Stir in butter and vanilla. Cover and cook. Fills 1 layer or 1 jelly roll.

Tips:

Chocolate Cream Filling: Increase sugar to 3/4 cup and add 1 square (1 ounce) unsweetened chocolate or 1 envelope premelted unsweetened baking chocolate flavor with the sugar.

Coconut Cream Filling: Stir in 1/3 cup flaked coconut with vanilla.

Butterscotch Cream Filling: Substitute 2/3 cup firmly packed brown sugar for granulated sugar.
