ORZO 
8 oz. orzo
8 oz. sliced mushrooms
1/2 c. diced scallions
1/4 c. crushed pecans
1 1/2 c. chicken broth
May wish to add garlic, minced to taste
Oil

1. Saute garlic in oil.

2. Saute orzo in olive oil until brown. Add mushrooms, scallions and pecans. Saute 1-2 minutes. Pour in chicken broth. Cover. Cook low for 20 minutes.

This recipe has beautiful texture and taste. I picked up some marked-down-for-quick-sell baby bella mushrooms this morning and came straight home and made this for lunch. 3/4 cup orzo sufficed; this was my first time sauteeing orzo. Pecans added uncommon flavor. I used chives on hand and virgin coconut oil. A keeper!
