TACO HOT DISH 
1 - 1 1/2 lbs. ground beef
1/2 c. chopped onion
1 pkg. taco seasoning mix
1 1/2 c. water
1 1/2 c. thinly sliced zucchini
1 can corn, drained
1 (14 1/2 oz.) can stewed tomatoes
1 1/2 c. uncooked instant rice
4 oz. shredded cheddar cheese (1 c.)

In large skillet brown ground beef and onion; drain. Stir in remaining ingredients, except rice and cheese, bring to a boil. Stir in rice, reduce heat to low, cover and simmer 5 to 7 minutes, until liquid is absorbed, stirring occasionally. Remove from heat. Fluff mixture with a fork, sprinkle with cheese; cover. Let stand until cheese is melted. 6 servings.
