STRAWBERRY SHORTCAKE 
2 c. all-purpose flour
1/2 tsp. salt
4 tsp. baking powder
2 tbsp. sugar (I use 5)
1/3 c. vegetable shortening (I use oil)
1/2 c. milk
1 lightly beaten egg
sweetened strawberries, cut
whipped cream, milk or both

Mix first 5 ingredients well; add milk and egg. Place in 8x8-inch or 9x9-inch pan or deep pie plate.

Bake 25 minutes at 350°F or until lightly browned. Cut and top with sweetened strawberries. Add whipped cream, milk or both.

The shortcake freezes well. If frozen, remove from freezer and before serving, warm in microwave oven. It is excellent.

Since microwave ovens vary in power, you may need to adjust your cooking time.
