HOT CHICKEN SALAD 
4 c. cooked chicken, diced
1/2 c. sliced almonds
1 (8 oz.) can water chestnuts, drained and sliced
1/2 c. green olives with pimentos, chopped
1/4 tsp. salt
1/8 tsp. pepper
2 tbsp. lemon juice
1/2 c. French fried onions, crumbled
3/4 c. Cheddar cheese, shredded
2 tbsp. sherry
1 c. mayonnaise
1 tsp. curry powder

Preheat oven to 350 degrees. Mix all ingredients after reserving some fried onions and cheese for the top. Bake for 30 minutes. Serves 6.

NOTE: If casserole seems dry, add a little more mayonnaise.
