SHEPHERDS SALAD (TURKISH) 
2 lg. tomatoes
1 sm. onion
3-4 pepperones (long skinny peppers)
2 cucumbers
1/4 bunch parsley
Salt to taste
2 tbsp. olive oil
2 tbsp. lemon juice (fresh lemon)

Peel, wash and slice the onion. Press the onion slices by hand with some salt. Rinse the onion under cold water and place in salad bowl. Chop tomatoes and put on top of onion. Peel and dice the cucumber. Slice the pepperones, add to salad bowl. Chop and add parsley. Add salt and mix olive oil and lemon juice and pour on salad.
