COUNTRY GOOD BAKED SQUASH 
2 lb. yellow squash
3 tbsp. instant minced onions
1/4 c. water
1/4 c. melted butter
1/2 c. milk
2 eggs, beaten
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. parsley flakes
2 tbsp. melted butter
1/2 c. cracker crumbs

Wash but do not peel squash and cut into small pieces. Add onions and water. Cook about 10 minutes or until tender. Do not over cook. Drain squash and transfer to 1 1/2 quart baking dish. Pour 1/4 cup melted butter over squash. Combine milk, eggs, seasoning and pour over all. Combine 2 tablespoons melted butter and cracker crumbs. Sprinkle over top. Bake in 450 degree oven for 20 minutes. Serves 6 to 8.
