ZUCCHINI PIE 
3 eggs
3 c. zucchini, sliced thin
1/2 c. grated Italian cheese
1/2 c. diced onion
4 oz. mozzarella cheese
Salt, pepper & chopped parsley
1 c. Bisquick

Mix all together by hand, put into lightly greased pie dish. Preheat oven to 350 degrees. Bake 25-40 minutes until brown. Can be frozen.

Note: Can use yellow butter squash except use butter instead of oil and do not use other cheese use 1 cup Cheddar cheese instead.
