EGG CUSTARD PIE 
4 eggs, slightly beaten
1 tsp. vanilla
2 1/2 c. milk, scalded
1 (9") unbaked pie shell
1/2 c. sugar
1/4 tsp. salt

Mix eggs, sugar, salt and vanilla. Slowly stir in hot milk. Pour in pie shell. Dash nutmeg on top. Bake at 475 degrees for 5 minutes. Reduce heat to 425 degrees until done.
