COCONUT CUSTARD PIE 
4 eggs, slightly beaten
1/2 c. sugar
1/4 tsp. salt
3 c. milk
1 c. coconut
1 tsp. vanilla
1 unbaked 9" pie shell

Combine eggs and sugar; add salt and milk, then the coconut. Add vanilla and blend well. Pour into pie shell. Bake in 425 degree oven until custard sets, about 30 minutes. Cool.

I just made the coconut custard pie and it is delicious and simple. My wife loved it. One comment mentioned that he had enough for 2 9-inch pies from the recipe. I had only one frozen pie shell in my freezer so I guess I'll be going out the my grocery store tomorrow to pick up another box of pie shells to finish the job. You all, I am sure, will be interested that after I finish his essay I'll be going to the kitchen to make a cup of tea to go with a big piece of pie. I won't tell my wife!!!!
