DANISH PICKLED CUCUMBERS 
2 med. cucumbers
1/3 c. water
1/2 tsp. salt
Snipped dill or parsley
1/3 c. cider vinegar
2 tbsp. sugar
1/8 tsp. pepper

Thinly slice cucumbers; place in glass or plastic bowl. Mix ingredients; pour over cucumbers. Cover and refrigerate 3 hours; stirring occasionally. Drain; sprinkle with dill.
