BREAKFAST CASSEROLE 
2 1/2 c. seasoned croutons
2 c. mild Cheddar cheese
1 lb. mild sausage
12 eggs
1 can cream of mushroom soup
2 1/2 c. milk
1 sm. jar sliced mushrooms (optional)

Brown sausage. Drain thoroughly and set aside. Lightly grease a 9 x 12 inch pan (glass is easiest). Cover bottom of dish with croutons. Sprinkle cheese over the top of croutons. Then place drained sausage on top. In bowl beat eggs. Add soup and milk. Combine well. Pour mixture in dish. Place sliced mushrooms on top. Bake at 300 degrees for 1 1/2 hours. Can be mixed ahead the night before.
