GRILLED PARMESAN TOMATOES | |
4 tsp. olive oil, divided 4 med. ripe tomatoes (about 1 1/3 lbs., covered and sliced 1/2 inch thick) 1 clove garlic, minced 2 tbsp. minced parsley 1/8 tsp. black pepper 2 tbsp. grated Parmesan cheese Heat broiler. Grease baking sheet with 1 teaspoon oil. Arrange tomato slices in single layer. In small bowl, mix remaining oil, garlic, parsley and pepper; drizzle over tomatoes and sprinkle with cheese. Broil 5 inches from heat 3 minutes or until cheese is golden brown. Serves 4. |
