GRILLED PARMESAN TOMATOES 
1 tbsp. olive oil
4 medium ripe tomatoes
1 clove garlic, minced
2 tbsp. minced parsley
1/8 tsp. black pepper
2 tbsp. Parmesan cheese

Slice tomatoes in desired thickness or in half. Preheat broiler; grease baking dish or cookie sheet with 1 teaspoon olive oil. Arrange tomato slices, single layer. In a small bowl, mix together remaining oil, garlic, parsley, and pepper. Drizzle mixture over tomatoes and sprinkle with Parmesan cheese. Broil 5 inches from broiler. Heat for 3 minutes or until cheese is golden brown. Serves 4.
