GRILLED PARMESAN POTATOES 
1/2 c. butter
1/2 c. grated Parmesan cheese
1/4 c. all-purpose flour
1 tsp. cayenne
1/2 tsp. pepper
1/2 tsp. salt
2 baking potatoes, peeled and halved lengthwise

Place cast iron skillet on briquettes in grill; melt butter in skillet on low setting. Combine cheese, flour, cayenne, pepper and salt in small bowl. Dampen potato halves in water; toss in dry mixture. Place in cast iron skillet. Cook with cover down on medium setting 35 minutes, or until done, turning once. Makes 4 servings.
