SCOTCH SHORTBREAD 
1 c. butter
5/8 c. sugar = 1/2 c. + 2 tbsp.
2 1/2 c. sifted flour

Mix together thoroughly 1 cup butter and 5/8 cup sugar. Stir in about 1/2 cup flour at a time. Mix with hands. Knead like pie crust dough. Roll dough in large ball. Chill dough.

Slice dough in 1 inch slices. Roll out slice to 1/2 - 1/3 inch thick. Cut into fancy shapes. Flute edges if you desire. Place on ungreased baking sheet. Bake 20 minutes at 300 degrees - will not brown.
