MIXER PIE CRUST | |
2 c. flour 1 tsp. salt 2/3 c. plus 2 tbsp. shortening 4 to 5 tbsp. cold water Measure flour, salt, and shortening into large mixer bowl; blend one minute on low speed, scraping bowl constantly. Add water; mix until all flour is moistened and dough begins to gather into beaters, about 10 seconds. Scrape bowl constantly. Gather dough into ball; shape into flattened round on lightly floured cloth-covered board. Roll dough 2 inches larger than inverted pie pan. Fold pastry into quarters; unfold and ease into pan. |
