MASHED POTATO PUFFS 
2 c. mashed potatoes
2 eggs
1 c. biscuit mix
Optional ingredients: sauteed onions, leeks, or shallots, (one or more) chopped parsley, cilantro, or other seasonings, grated cheese (cheddar, Swiss, Roque- fort, etc.), bacon bits, spices to taste

Mix all ingredients thoroughly. Form into 1/4 inch thick patties (lightly dusted with flour) or drop from a large spoon into moderately hot oil in skillet (spreading with spoon or spatula into thin patties. They'll puff up! Cook over medium heat until both sides are golden brown. Drain on paper towel. Serve with sour cream and chives, melted cheese or plain.
