BASQUE CHICKEN & RICE 
1 chicken or 4 chicken breasts, cut up
3 lg. cloves garlic, pressed
1 94 oz.) can pimentos
1 onion, chopped
2 tbsp. chopped parsley
1 bay leaf, crumbled
1/2 tsp. Italian seasoning
1 c. rice
1/4 tsp. saffron
3 c. chicken broth
2 c. water
1/4 c. red wine
Salt & pepper to taste

Brown floured chicken (salt and pepper) in olive oil. Add onion, garlic and saute several minutes. Pour into large casserole and bake at 350 degrees for 1 hour or until cooked. Add more broth or water if mixture becomes too dry. Delicious dish!
