WHOLE WHEAT BREAD | |
1 c. lukewarm water 2 pkg. yeast 1 tbsp. sugar or honey 3 c. warm water 5 tbsp. sugar or honey 2 tsp. salt 1/3 c. oil 1 c. wheat germ 3 c. whole wheat flour 5 c. unbleached flour Soften yeast in lukewarm water with 1 tablespoon honey or sugar. In large bowl combine water, sugar (honey), oil and salt with wheat germ and part of the flour (white). Mix with a beater, add dissolved yeast. Then add 3 cups whole wheat flour and 4 cups white flour. Put on floured board and knead in as much as you can of the last cup of flour. Knead until smooth and elastic. Dough should be firm but not hard. May not need all of the flour. Put into greased bowl, grease top and let rise until double. Punch down and form into loaves, rise again until double. Bake at 350 degrees for 35 to 45 minutes. 4 loaves. Butter top of loaves and sides and bottom after removing from pans. |
