BEEF STROGANOFF | |
1 lb. beef steak (sirloin or round) 1/2 lb. fresh mushrooms or equal amount in canned 1/2 cup minced onion 2 tbsp. butter 1 can (10 1/2 oz.) beef consomme 2 tbsp. catsup 1 small clove garlic, minced 1 tsp. salt 3 tbsp. flour 1 cup sour cream Cut meat in thin slices. Cook and stir mushrooms and onion in butter until tender. Remove from skillet. In same skillet, brown meat on both sides. Set aside 1/3 cup of comsomme. Stir remaining consomme, catsup, garlic and salt in skillet with meat. Blend 1/3 cup consomme and flour. Stir in meat, etc. Add mushrooms and onions. Heat to boiling. Stirring constantly, about one minute. Stir in sour cream. Heat thoroughly. Serve over cooked noodles or rice. |
