MEXICAN PIE 
2 frozen pie shells, thawed
1 c. Muenster cheese, grated
1/2 can chilies (hot), chopped
3 tbsp. Masa Harina flour (can substitute corn meal)
1 can mushrooms, chopped
1 sm. bottle pimientos
6 eggs, beaten
1/2 c. milk

Preheat oven to 350 degrees. Layer ingredients in the following manner: First, put grated cheese in the pie shell, then the chopped chilies, next the masa harina and then mushrooms. Drain pimientos and sprinkle over mushrooms.

In a mixing bowl, beat the eggs and milk together until blended. Pour over the layered pie ingredients and put aside for 10 minutes. Bake 30 minutes until done. Test with a toothpick in the center. It should come out clean.

Can replace hot chilies with cayenne pepper to taste, if desired.
