MEXICAN FIESTA PIE 
3 c. corn or tortilla chips
15 oz. can chili with beans
1/2 c. chopped onion
2 c. shredded cheese, American, cheddar, or Monterey Jack
Shredded or chopped lettuce, tomatoes, and olives

Heat oven to 400 degrees. Lightly grease a 9 inch square pan or 1 1/2 quart shallow casserole. Layer half the corn chips, chili, onion, and cheese in pan; repeat. Bake uncovered at 400 degrees for 15 minutes or until hot. Garnish with lettuce, tomatoes, and olives. Recipe can be double if desired. 4 servings.
