SHOE PEG CORN SALAD 
1 can baby English peas, drained
1 can Shoe Peg corn, drained
1 small jar diced pimentos, drained
1 small bell pepper, chopped (optional)
1 bunch green onions, chopped
1/2 c. vegetable oil
3/4 c. vinegar
1 tsp. salt
1 tsp. pepper
1/2 c. sugar

Mix together the first 5 ingredients in bowl and set aside.

In saucepan, mix together remaining ingredients. Bring to a boil and pour immediately over vegetables. Marinate at least overnight.

Just before serving, drain lightly, leaving a small amount of dressing on vegetables.
