SHOE PEG CORN SALAD 
2 cans shoe peg corn, drained
1 chopped bell pepper
4 tbsp. pimentos
1 lg. red onion, chopped
4 tbsp. vegetable oil
6 tbsp. sugar
1 tsp. salt
1/2 c. vinegar

Mix corn, bell pepper, pimentos and onion together. Add oil, sugar, salt and vinegar. Let stand in refrigerator several hours before serving.
