BAKED CUSHAW 
1 medium cushaw
2 1/2 c. sugar
3 to 4 eggs
1 stick butter
1 c. evaporated milk
1 tbsp. cinnamon
1 tbsp. nutmeg
1 tbsp. vanilla

Boil cushaw and remove skin when tender. Add remainder of ingredients; mix thoroughly. Add sugar if necessary.

Bake at 350°F, uncovered, until set.
