CHOCOLATE MOUSSE CHEESECAKE 
GRAHAM CRUST:

3/4 c. graham cracker crust
1/2 stick unsalted butter, softened
2 tbsp. sugar

CHOCOLATE CHEESE FILLING:

3 (8 oz.) pkgs. cream cheese, softened
1 c. sugar
2 eggs
8 (1 oz.) squares semi sweet chocolate, melted & cooled
3/4 c. sour cream
7 tbsp. strong coffee
2 tbsp. heavy cream
1 tsp. dark rum

1. Preheat oven to 350 degrees.

2. Prepare graham crust: Combine crumbs, butter and sugar with mixer until well blended. Press mixture into bottom of 8" springform pan. Set aside.

3. Prepare cream cheese filling. Combine cream cheese, sugar and eggs with mixer until blended. Add chocolate, sour cream, coffee, heavy cream and rum. Mix again with mixer until blended. Pour on top of crust.

4. Bake in preheated 350 degree oven for 45 minutes. Turn oven off and prop oven door slightly. Leave cheesecake in the oven with door ajar 1 hour. Remove the pan from the oven and cool. Refrigerate overnight.

5. Loosen side of pan and remove. Let stand 15 minutes before serving.
