3 STEP BARBECUE SAUCE 
3 tbsp.paprika
2 tsp. seasoned salt
2 tsp. black pepper
2 tsp. garlic powder
1 tsp. red pepper
1 tsp. ground oregano
1 tsp. dry mustard
1/2 tsp. chili powder

Combine all ingredients in a shaker; stir well. Yield: 6 1/2 tablespoons.

BASTING SAUCE:

1/4 c. firmly packed brown sugar
1 1/2 tbsp. dry spices (above)
2 c. red wine vinegar
2 c. water
1/4 c. Worcestershire sauce
1/2 tsp. hot sauce
1 sm. bay leaf

Combine all ingredients; cover and let stand 8 hours. Yield: 4 1/2 cups.

EATING SAUCE:

8 oz. tomato sauce
1/2 c. honey mustard
1 c. catsup
1 c. red wine vinegar
1/4 c. Worcestershire sauce
1/4 c. Hickory smoked Worcestershire sauce
1/4 c. butter
2 tbsp. hot sauce
1 tbsp. lemon juice
2 tbsp. brown sugar
1 tbsp. paprika
1 tbsp. seasoned salt
1 1/2 tsp. garlic powder
1/8 tsp. chili powder
1/8 tsp. red pepper
1/8 tsp. black pepper

Combine all ingredients in a Dutch oven. Bring to a boil; reduce heat, and simmer 30 minutes, stirring occasionally. Yield: 1 quart.
