PETITE CHEESECAKES 
3 (8 oz.) pkgs. cream cheese, room temperature
4 eggs
1 c. sugar
2 tsp. vanilla
28 vanilla wafer cookies

Slowly beat the softened cream cheese in a large mixing bowl. Add eggs one at a time, making sure each one is blended in before adding the next. This takes about 10 minutes.

Add sugar and vanilla and blend well. Put wafer in paper cups (muffin) and fill 2/3 full with the cream mixture. Bake at 350 degrees for 20 minutes. Cakes will not brown. Cool on rack. Top with any kind of fruit topping.
