LEMON VINAIGRETTE 
1 c. good olive oil
2/3 c. fresh lemon juice
1/2 c. snipped fresh chives or 1 clove minced garlic
2 tbsp. finely minced shallots or scallions
2 tbsp. Dijon mustard
Salt and pepper, freshly ground, to taste

Combine all ingredients with seasoning to taste in a covered container and shake well until blended or mix in bowl with a wire whip until well blended. You may substitute 1/3 cup vinegar and 1/3 cup lemon juice for the lemon juice if you wish. Makes about 1 3/4 cups.
