OVEN EASY BEEF STEW 
2 lbs. stew meat or cut up roast
7 large potatoes, cubed
1 bunch carrots, sliced thick
2 c. celery, cut up
1 onion, cut up
Salt to taste

Mix above ingredients together, then put into a greased roaster.

Mix:

1 1/2 c. tomato juice
1 tbsp. sugar
3 tbsp. Tapioca

Pour over roast.

Cover roast so it is sealed good. Put in 300 degree oven for 3 hours. Don't lift cover the whole 3 hours. Great with garlic bread and tossed salad.
