CHEESY ONION CASSEROLE 
5 med. onions, thinly sliced
1/4 c. butter
1/4 c. all-purpose flour
2 c. milk
2 c. (1/2 lb.) shredded sharp process American cheese
1/2 tsp. salt
1/2 tsp. pepper

Separate onion slices into rings; place in an ungreased 2 1/2 quart casserole. Melt butter in a heavy saucepan over low heat, and blend in flour; cook until bubbly, stirring constantly. Gradually add milk; cook over low heat, stirring constantly, about 6 minutes or until thickened. Stir in cheese, salt, and pepper; cook just until cheese melts, stirring constantly. Remove sauce from heat; pour over onion, mixing gently. Bake at 325 degrees for 45 to 50 minutes or until bubbly. Yield: 6 to 8 servings.
