ZUCCHINI MUFFINS 
3 eggs, beaten
2 c. sugar
1 c. Wesson oil
1 tsp. vanilla
2 c. flour
1 c. quick oats
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
2 c. grated zucchini squash
1 c. finely chopped pecans

Combine dry ingredients. Add oil, eggs, vanilla, squash and pecans. Preheat oven to 350 degrees. Spray muffin pan with Pam. Bake until inserted toothpick comes out clean.
