ZUCCHINI MUFFINS 
1 lg. egg
1/2 c. sugar
1/4 c. salad oil
3/4 c. flour (try whole wheat)
1/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1 c. grated, unpared loosely packed zucchini
1/4 c. raisins (optional)
1/4 c. nuts (optional)

Beat egg, sugar and oil with wire whisk until blended. Add remaining ingredients and stir only until the dry ingredients are moistened. Bake at 350 degrees about 20-25 minutes or until lightly browned. Makes 8 muffins.
