ZUCCHINI MUFFINS 
3 eggs
1 1/2 c. white sugar
1 c. cooking oil
2 tsp. vanilla

Beat these four ingredients together until thick and smooth.

2 c. grated zucchini squash
2 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tbsp. cinnamon

Add to thick mixture and mix well.

Stir in 1 cup of chopped pecans and bake at 350 for 1 hour if using bread pans. If using muffin pans only bake 30 minutes.
