ZUCCHINI MUFFINS 
3 eggs, beaten
2 c. sugar
1 c. salad oil
1 tsp. vanilla
1/4 tsp. baking powder
2 c. zucchini, fine grated
2 c. flour
1 c. quick oats
1 tbsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts

Mix all ingredients and pour into greased and floured muffin tins. (I use small muffin tins). Bake at 350 degrees for 20 to 25 minutes. Makes 20 to 24 muffins. For small muffin tins, bake 15 to 18 minutes. Small tins make approximately 72 muffins.
