SAUSAGE - RICE CASSEROLE 
1 lb. hot sausage (like all pork country sausage), crumbled
1 lb. mild sausage
1/2 c. rice, uncooked
4 1/2 c. boiling water
2 pkgs. chicken noodle soup mix (Lipton's)
1 c. chopped celery
1 c. chopped onion
1 c. chopped green pepper

Brown sausage and drain. In large pot, combine rice and soup mix. Add boiling water. Boil 7 minutes. Add celery, onions, green peppers, and sausage. Pour into greased casserole. Can top with slivered almonds, if desired. Bake 1 hour at 350 degrees. Makes a large casserole.
