CRUNCHY LEMON NUT MUFFINS 
Streusel Topping (recipe follows)
1 3/4 c. flour
1 c. chopped walnuts
1/3 c. sugar
2 tsp. baking powder
1 tsp. grated lemon peel
1/2 tsp. salt
1 egg
1/2 c. milk
1/3 c. butter, melted
1/4 c. sour cream

Prepare streusel topping, set aside. In a large bowl, combine flour, walnuts, sugar, powder, lemon peel and salt.

In a small bowl, beat egg, add milk, butter and sour cream, stir just until blended.

Fill greased muffin pans 2/3 full. Sprinkle streusel topping on top. Bake in a 400 degree oven 15-25 minutes or until toothpick inserted in center comes out clean.

STREUSEL TOPPING:

3 tbsp. flour
3 tbsp. sugar
3 tbsp. wheat germ
2 tbsp. soft butter
1 tsp. grated lemon peel

Mix all ingredients until crumbly.
