EGGPLANT CAVIAR 
1 c. milk
2 eggs
1 c. flour
2 c. bread crumbs
Large eggplant
Oil for frying
Sour cream
Caviar

Peel and slice eggplant. Sprinkle each slice with salt and put in bowl of cold water at least 1 hour. Drain, dip in milk, then in flour, then in egg and finally in bread crumbs. Fry, cut into bite-size pieces. Let cool. Spread with sour cream and then put caviar on top.
