STRAWBERRY PECAN PIE | |
3 egg whites, beaten stiff 1 c. sugar 12 soda crackers, rolled fine 1 tsp. vanilla 1/4 tsp. baking powder 1/2 c. chopped pecans 1 pkg. (best frozen) strawberries 1 c. whipped cream Beat sugar into egg whites gradually. Beat 3 minutes longer after all sugar is added. Fold in crackers, baking powder, vanilla and nuts. Pile in 9 inch pie pan leaving a large indentation in center. Bake at 325 degrees for 45 minutes. Let cool. Fold well drained fruit in whipped cream. Pour into indentation in meringue. Chill for 3 hours. |
